Understand how the Japanese use rice and start your journey to mastering it.
Japanese rice isn't a must, but it's what these dishes were created for, so I'll share my quick visual rice guide with you.
Most dishes will be cooked with short-grain Japonica rice (ジャポニカ米), also known as Uruchimai (粳米). It's the rice the average person will consume the most throughout the week.
Some other types of rice are used as well for more specialty recipes, like mochi gome.
